Cabernet 50%, Merlot 50%.

VINEYARD
Name: Vigna Ospedaletto, Vigna Colombarone 1986.

AGEING
After devatting and malolactic fermentation, the wine ages in stainless steel tanks for 5-6 months. The wines undergo fermentation separately: cabernet rests on skins 5-6 days longer than Merlot. Before being put into the market bottle-ageing take place during 3 months.

FEATURES

Colour: ruby red colour, very intensive, with violet nuances.

Nose: vegetable scent with spicy black pepper and vanilla.

Mouth: harmonic, roundness tannins, a good balance with a persistant finish, fresh and sapid.

Served with: salami appetizers, soft cheese, red meat, roasted and grilled meat. It is excellent with pasta and ravioli.

Service temperature: to be served at 16° C..
