VINE VARIETY
Cabernet 50%, Merlot 50%.

VINEYARD
Name: Vigna Ospedaletto, Vigna Colombarone.
Exposure: east, south-east.
Soil: clayly with limestone and sand content.

TRAINING SYSTEM
Spurred cordon.

DENSITY OF PLANTING
5000 plants /ha.

YEAR OF PLANTING
1986.

HARVEST
First half of October.

HARVEST METHOD
Hand picking of selected grapes and thinning out of unripe grapes.

FERMENTATION
Grapes are destemmed and crushed, transported into fermantation vessels at a temperature of 28/30° C. The juice rests with the skins to allow the extraction of colour and taste during 8/10 days approximately.

AGEING
After devatting and malolactic fermentation, the wine ages in stainless steel tanks for 5-6 months. The wines undergo fermentation separately: cabernet rests on skins 5-6 days longer than Merlot. Before being put into the market bottle-ageing take place during 3 months.

FEATURES

Colour: ruby red colour, very intensive, with violet nuances.

Nose: winy with delicate aromas of violet and fruity aromas.

Mouth: harmonic, good persistence, roundness tannins.

Served with: salami appetizers, soft cheese, red meat, roasted and grilled meat. It is excellent with pasta and ravioli.

Service temperature: to be served at 16° C..
