HARVEST
Second half of September.

HARVEST METHOD
Hand harvest by selecting the grapes that have obtained the requested sugar level. The classic method dries clusters of grapes on mats of straw for 4 months and with controlled temperature allow to evaporate the water from the grapes, by leaving high concentration of fruit.

FERMENTATION
Soft and gentle press of the entire cluster of the grapes. The must is cooled down at 13°C and it is naturally decanted. After 18/24 hours the must is transferred to controlled temperature stainless steel tanks at around 20°C and the alcoholic fermentation ends partially in new and second hand barrels.

AGEING
Font’Enea is refined in barriques and it is released 8 months after the bottling process.

FEATURES

Colour: bright gold.

Nose: fresh peach.

Mouth: soft mouth and balanced.

Served with: blue cheeses.

Service temperature: to be served at 10-12° C..
